Whenever I heard "Biriyani" sound, the first thing is comes in my mind is "Chicken 🐔 or Mutton Biriyani". Hmm! Then Vegetable Biryani?, "Ha Ha!" The Vegetable Biriyani is a top-notch dish in the vegetarian recipes.
Vegetable Biriyani prepared by basmati rice, spices, mint, mixed vegetables such as carrot, beans, cauliflower, green peas, capsicum and soya chunks. Wow, the taste was outstanding, and it has more health benefits.
Methods to make Vegetable Biriyani:
We have two processes to make a delicious Vegetable Biriyani; They are:
- Using Pressure cooker
- Using Dum method
For both processes, we use same ingredients and same measurements. But cooking time is different, because in dum method, we keep spices, veggies, boiled rice in the vessel sealed with flour paste and cooked in low heat, so it takes a lot of time and the taste was quite richer than the pressure cooker.
On lunch box or lazy time. I would prefer biryani made by pressure cooker because we can make it within twenty to twenty-five minutes, and it is compatible well with Egg cube masala and Raita.

Notes:
- Don't skip ghee in this recipe because it gives good flavour and enhancement.
- Mint is optional in this recipe, but it gives good aroma and help for digestion.
- Don't add more tomatoes in this recipe because it gives more tangy flavour and over-dominate the biryani flavour.
- For 1 cup basmati rice = 1 1/2 cup of water is a correct measurement, don't add more water, otherwise the rice will overcook.
- Soak the soya chunks in the boiling water with salt for fifteen minutes and drain the water completely.
INGREDIENTS FOR MAKING VEGETABLE BIRIYANI:
- Biriyani Masalas:
- Fennel Seeds - 1/2 tsp
- Cinnamon Stick - 1 inch
- Star Anise - 1 no
- Cardamom - 3 nos
- Bay leaves - 1 no
- Cloves - 3 nos
- Basmati Rice - 1 cup
- Water - 1 1/2 cup
- Ginger garlic paste - 1 tsp
- Chopped Onion medium size - 2 nos
- Chopped Tomato medium size - 1 no
- Chopped Capsicum 1/2 size
- Green Chillies - 3 nos
- Chopped Cauliflower - 1/2 cup
- Chopped Beans - 1/2 cup
- Chopped Carrot - 1/2 cup
- Soya Chunks - 1 cup
- Green peas - 1/2 cup
- Salt - Required taste
- Turmeric Powder - 1/2 tsp
- Chilli Powder - 1 tbsp
- Garam Masala - 1 tsp
- Mint - 1 handful
- Coriander leaves
- Ghee - 2 tsp
- Oil - 2 tsp

METHODS FOR MAKING VEGETABLE BIRIYANI:
- Add 1 cup of basmati rice into the bowl and clean well until the water clear and soak it for ten to fifteen minutes.then after ten minutes drain the water completely and keep the basmati rice aside.
- Add 2 tsp oil and 2 tsp ghee in the pressure cooker.
- Once oil is hot, add biryani masalas (mentioned in the ingredients) in the cooker.
- Once masalas tempers, add onion and green chillies in the cooker and saute well until it becomes translucent.
- Add tomatoes in the cooker and saute well until it became mushy.
- Add 1 tsp ginger garlic paste in the cooker and saute well until the raw smells goes off.
- Add one handful of mint leaves and saute well.
- Add mixed vegetables such as (1/2 cup of carrot, 1/2 cup of cauliflower, 1/2 cup of green beans, 1/2 cup of green peas, Capsicum, 1 cup of soya chunks) and saute well.
- Add masalas (1/2 tsp turmeric powder, 1 tbsp chilli powder, 1 tsp garam masala, 1/2 tsp crushed pepper) and salt in the cooker and saute well.
- Add 1 1/2 cup of water in the cooker and boiled well.
- Once water boiled, add 1 cup of basmati rice and mixed well.
- After three minutes, close the lid and wait for one whistle or ten minutes, then open the lid after steam goes off. Hmm!! The tasty Veg Biriyani Ready.
PICTORIAL FOR MAKING VEGETABLE BIRIYANI:
Add 1 cup of basmati rice into the bowl and clean well until the water runs clear and soak it for ten to fifteen minutes. Then after ten minutes drain the water completely and keep the basmati rice aside.

Once oil is hot, add biryani masalas (mentioned in the ingredients) in the cooker.
Chopped onion, tomatoes, capsicum, green chillies into thin slices.
Once masalas tempers, add onion and green chillies in the cooker and saute well until it becomes translucent.
Add tomatoes in the cooker and saute well until it became mushy.
Add 1 tsp ginger garlic paste in the cooker and saute well until the raw smells goes off.
Add mixed vegetables such as (1/2 cup of carrot, 1/2 cup of cauliflower, 1/2 cup of green beans, 1/2 cup of green peas, Capsicum, 1 cup of soya chunks) and saute well.
Add masalas (1/2 tsp turmeric powder, 1 tbsp chilli powder, 1 tsp garam masala, 1/2 tsp crushed pepper) in the cooker.
Add salt in the cooker and saute well.
Add 1 1/2 cup of water in the cooker and boiled well.
Once water boiled, add 1 cup of basmati rice and mixed well.
Wait for three minutes.
Close the lid and wait for one whistle or ten minutes
Open the lid after steam goes off. Garnish with coriander leaves.
