                                In my childhood itself am a big fan of my mom's egg recipes such as "Egg Aviyal", "Egg Pulimulam", "Egg Masala", "Egg Adai Aviyal". when I grown up, I explored the new egg recipes and made the "Egg meal maker varuval". Hmm!!, first time got a lot of appreciation from my mom and sissy😃. After that I learned Egg Cube Masala recipe from my friend Kavi. this recipe was so tasty and its suits well with all rice varieties especially Vegetable Biriyani, Chapati, etc. 
                                For making egg cubes, we need to cook the egg batter in the idly cooker or any pan with lid. I usually put all egg batter in the same pan with lid and place this in the idly cooker.you can also pour the egg batter in idly mold in the idly cooker. After ten to fifteen minutes, the egg cooked and change to a fluffy state.

How to check the egg cooked well fully:

                                Once the egg is in a fluffy state, poke the egg on a pan with the toothpick or skewers, then gently pull the toothpick or skewers. If the egg is not sticking in the skewers, that is the correct state otherwise cooked the egg in over five minutes and check with the above same process.

Note: 

      •  Before Pouring the egg batter into the pan, grease the pan or idly mold with oil or ghee, so that egg will come out easily.
      • After taking the egg from the idly cooker, let it be cool for some time or else the egg does not come with correct shape.

Ingredients for making Egg Cube Masala:

      • Egg - 3 Nos
      • Onion big size- 1 No
      • Tomato big size - 1 No
      • Curry leaves - 1 spring
      • Mustard seeds - 1/2tsp
      • Green Chilli - 2 Nos
      • Oil - 1 tbsp
      • Ginger garlic paste - 1 tsp
      • Turmeric Powder - 1/2 tsp
      • Chilli powder - 1 tbsp
      • Garam Masala - 1/2 tsp
      • Pepper powder - 1/2 tsp
      • Coriander powder - 1/2 tsp
      • Salt - Required taste
      • Coriander leaves - 1 spring

Methods for Making Egg Cube Masala:

Step 1:
       Grease the pan or idly mold with oil or ghee. Break the three eggs in the pan, add required salt and mixed well. Close the pan with the lid and keep that inside the idly cooker or directly pour the egg batter in the idly mold.After ten to fifteen minutes, open the lid and check whether the egg is in a fluffy state. then poke the egg on the pan with toothpick or skewers and pull the toothpick or skewers gently. If the egg is not sticking in the skewers, that is the correct state otherwise cook the egg in over five minutes and follow the above same process. Once the egg cool completely, trim the edges using a sharp edge knife or spoon and remove it from the pan then chopped the egg into small cubes.
Step 2:
        Pour 1 tbsp oil into the pan. Once it is hot, add mustard seeds and curry leaves, then add onion and green chillies, saute well until it become a translucent. Now add ginger garlic paste and saute well until the raw smell goes off. Add tomatoes and saute well until it became a mushy substance. Now it's a time to add masalas such as 1/2 tsp turmeric powder, 1 tbsp chilli powder, 1/2 tsp garam masala, 1/2 tsp coriander powder and required salt in the pan, saute well until raw smell goes off. add 1/4 cup water and boiled well, put the egg cubes in the pan and saute gently. Let it be sometimes for the egg absorbs the water, then add 1/2 tsp pepper powder in the pan.Garnish with coriander leaves.

Step-by-step instructions with images for making Egg Cubes Masala:

Now it's a time to add masalas such as 1/2 tsp turmeric powder, 1 tbsp chilli powder, 1/2 tsp garam masala, 1/2 tsp coriander powder and required salt in the pan, saute well until raw smell goes off.
Add 1/4 cup water and boiled well, put the egg cubes in the pan and saute gently. 
Put the egg cubes in the pan and saute gently. Let it be sometimes for the egg absorbs the water.
Add 1/2 tsp pepper powder and 1 tsp oil (optional) in the pan.
Garnish with coriander leaves.
