Cauliflower Varuval is a vegetarian recipe, but that taste resembles the Non-Vegetarian dishes. I learned this recipe from my mom, and she made this recipe with a combination of onion and tomato. It suits with Rice Varieties, Chapati, Dosai, etc.

INGREDIENTS:
- 200 gm Cauliflower
- 1 chopped onion
- 1 chopped tomato
- 3 nos chopped green chilies
- 1 tsp ginger garlic paste or crushed ginger and garlic
- salt as per taste
- 1 tsp chili powder
- 1/4 tsp turmeric powder
- 1/2 tsp garam masala
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/2 tsp jeera
- Coriander leaves
NOTE:
Sometimes the green worms are inside the cauliflower florets, to avoid that do the below steps before cooking. They are.
- Boil the water with 1 tsp salt and turmeric powder.
- Switch off the flame and submerge the florets inside the water for fifteen minutes.
- Drain the florets so that small worms come out from the florets.
INSTRUCTIONS:
- Chop the onion, tomato, green chilies into small size and cauliflower vertically.
- In the saucepan, heat 1 tbsp coconut oil or any cooking oil on it then add mustard, jeera seeds, and curry leaves.
- Once mustard and jeera tempers, add onion and green chilies.
- Sauté nicely, until the onion change to translucent.
- Now add crushed ginger-garlic or ginger garlic paste, sauté nicely until the raw smell goes off.
- Add tomatoes and sauté until it's changed to be a mussy substance.
- Add cauliflower in the pan, sauté nicely for five minutes.
- Close the lid and wait for another five to ten minutes.
- Add masalas (Chilly powder, garam masala, pepper powder, salt) in the pan and sauté nicely until the cauliflower cooked with the masalas.
- Garnish the cauliflower varuval with coriander leaves.
